1 cup peanut butter
1 cup of sugar
1 teaspoon of vanilla extract
1 large egg, lightly beaten

Preheat oven to 350 degrees

In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined.
I use a small cookie scoop and put on ungreased baking sheet about 1 inch apart. Flatten the mounds with the tines of a form, making a crosshatch pattern on the cookies.

Bake until golden around the edges, about 10 minutes. Switch the position of the sheets halfway through baking. Transfer to racks to cool.

Repeat with remaining dough.

Be care with this recipe. When you are baking cookies I usually time them by watching them rise and when they fall, they are done. Since this one has no flour if you wait for them to fall you will burn them.
