6 Bacon slices, fried and crumbled
1 c yellow onion, diced
1/3 c flour
6 cups chicken stock, hot
4 cups baked potatoes, peeled and diced
2 cups heavy cream
1/4 c parsley, chopped
1 tsp basil
1 1/2 tsp garlic
1 1/2 tsp salt
1 1/2 tsp black pepper
1 1/2 tsp red pepper sauce
1 c cheddar cheese grated
1/4 c green onions diced, white only

Directions:
Directions:
Chop bacon, reserve. Cook onions in remaining drippings over medium heat until transparent

Add flour, stirring to prevent lumps, for 3-5 minutes just until slightly turning gold

Add chicken stock gradually, whisking to prevent lumping, until liquid thickens

Reduce heat to simmer, adding potatoes, cream, basil, parsley, garlic, salt, pepper and a dash of pepper sauce..

Simmer for 10 minutes, do not boil, add grated cheese and onions, heat until smooth

Garnish with greens of onion and bacon
