Stuffed Pepper Cups Recipe

6 medium green peppers
1 pound ground beef
1/3 cup chopped onions
1 tablespoon fat
2 cups stewed tomatoes or a 1 pound can
3/4 cup cooked rice
2 tablespoons Worchestershire Sauce
Salt and Pepper to taste
1 cup shredded sharp process American cheese
1/2 teaspoon oregano (optional)

Directions:
Directions:
Cut off tops of peppers and remove seeds.
Precook peppers in boiling salt water for 5 minutes.
Sprinkle inside with salt.
Brown meat and onions in hot fat.
Add tomatoes, rice, Worchestershire sauce, and salt & pepper to taste.
Cover and simmer until rice is almost tender, about 5 minutes.
Add cheese and stuff peppers.
Stand upright in baking dish.
Bake uncovered in 350 degree oven for 25 minutes or until hot.
Sprinkle with more cheese.

You can freeze these before baking to eat later. With 2 pounds of beef add a can of Catalina Sauce.
