2 c. or less of roast beef, diced (left-overs from the Beef Roast)
1 med. onion, diced
1½ c. potatoes, diced
3 T. cooking oil
1 c. water
2 T. flour
Left over roast beef gravy
Salt and pepper to taste

Directions:
Directions:
Lightly brown potatoes and onions in oil, or bacon drippings over medium heat. Mix in diced beef; then sift flour into mixture. Add water and left over roast beef gravy and blend well. Reduce heat and simmer, covered 30 to 35 min.,Stir occasionally and add water and flour, if you don’t have prepared gravy.

Mama used a cast-iron Dutch oven or skillet for this recipe. This recipe was one she used frequently with leftover roast beef. She would serve it on white rice with homemade biscuits and LeSeur Canned peas or no veggie at all. She always had a salad or dessert too.
