3 lbs. round steak, tenderized
1 cup flour
1 tsp. salt
1 tsp. black pepper
2 eggs, beaten
1 cup cream, plus 3 T.
1 cup canola oil
4 cups saltine crackers, finely crushed(72 squares)
3 cups beef broth
1½ tsp. Worcestershire sauce
1½ tsp. Tabasco sauce
1½ tsp. Kitchen Bouquet
*NOTE: MOST MEAT DEPT. WILL TENDERIZE ROUND STEAK.

STEAK DIRECTIONS:
On a plate, mix together flour, salt and pepper. Cut meat
into 6 serving size pieces. Dredge meat through the flour
mixture. Gently pound flour mixture into meat. In small
bowl, mix 3 T. cream and eggs. Dip floured meat into egg
mixture then coat both sides with crackers. Pre-heat oil in
12 inch skillet on medium heat, brown meat on both sides,
about 4 minute. Reduce heat to med-low, cook covered for
20 minutes, turning occasionally. Remove from pan, drain
on brown paper bags and keep warm in 200º oven while
making gravy.
GRAVY DIRECTIONS:
Leave 6 T. grease in pan. Add more if needed. On medium
heat, stir 6 T. of left over seasoned flour into grease for
about 2 minutes. Reduce to med-low and slowly stir in cream
to form a thick paste. Add beef broth, slowly, stirring, add
Worcestershire, Kitchen Bouquet, and Tabasco. On medium
heat cook until bubbly and hot. Ladle over steaks and serve.
