2-3 lbs Beef Stew Meat, Chuck Roast or better grade of beef (sirloin steak) cut into chunks
1 medium chopped onion -
16 oz cut up Fresh mushrooms
1 or 2 can’s cream of mushroom soup
16 ounce carton of Sour cream
Salt and pepper

Directions:
Directions:
Dredge beef chunks in flour and brown in oil (for less fat, you can skip this step, and just put meat into spayed pan )
Drain on paper towel.
Put back in pan or crock pot.
Add rest of ingredients - mix to blend well.
Simmer for 1-2 hours on stove top until meat is tender, or cook in crock pot 6-8 hours low or 4-5 hours on high.. (Note: If using sirloin, you do not need to simmer because meat is tender enough)
Just before serving add at least 16 oz sour cream (taste to see if you need more)
Mix well.
salt and pepper to taste

Serve with extra wide, flat noodles.
