3 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 Tbsp. cinnamon
1 cup chopped pecans
2 cups shredded zucchini (about 1 large zucchini)
2 large eggs, lightly beaten
1-½ cups sugar
¾ cup honey
1 cup vegetable oil
2 tsp. vanilla extract

Directions:
Directions:
Combine first 6 ingredients in a large bowl stirring well. Combine zucchini and remaining 5 ingredients, stirring well. Add to flour mixture, stirring just until dry ingredients are moistened.
Spoon batter into two greased and floured 8-1/2 x 4-1/2 inch loaf pans. Bake at 350 degrees for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans and cool on wire racks.
