2½ lb butternut squash
¼ c. water
½ c. walnut pieces, about ¼ inch size
½ c. crumbled blue cheese
4 tbsp. unsalted butter
Kosher salt and freshly ground black pepper

1. Carefully cut the squash in half lengthwise. Scrape out the seeds. Place the squash, skin side up, in a glass baking dish. Add the water to the bottom of the baking dish. Cover dish with a double layer of plastic wrap; poke a few holes in the wrap with a small knife.
2. Place the dish in the microwave and cook on high power until the squash is very tender, about 15 minutes. Allow the squash to cool slightly and carefully remove the plastic wrap. With a large spoon, scrape out the flesh of the squash into a serving bowl; discard the skin.
3. Meanwhile, preheat oven to 350º F. Place walnuts on a small, rimmed baking sheet. Toast in the oven until crisp and lightly browned, about 10 minutes. Cool on a plate or paper toweling.
4. Rough smash the squash; add the butter, walnuts and cheese. Add salt and pepper to taste. Reheat in microwave on high power until the squash is warmed through, about 3 minutes.
