2 c. sugar
¾ c. milk
½ c. sugar, caramelized
1 c. pecans (clean and break into pieces- each half into quarters)
1 T. oleo
1 tsp. Adams vanilla

This recipe came with no instructions. You had to watch MeeMaw ( and PeePaw, who handled the pecans) to know what to do. And it takes some practice. They are easy to mess up.
Here goes my attempt at instructions:

Mix the sugar and milk. Bring to a boil When it comes to a boil, add caramelized sugar.

Caramelizing sugar- Put the ½ cup of sugar into a small pan over medium low heat, and let it melt, stirring to keep it from burning. It will be a nice brown color.

Softly boil mixture until soft ball stage, about 10 minutes. I learned from MeeMaw that you watch the bubbles. They look a certain way when it is going well- about the size of quarters.
When ready, remove from heat, stir in oleo ( margarine to you youngsters) and vanilla ( it had to be Adams vanilla).
Now this is the hard part- Keep stirring mixture CONTINUOUSLY until it starts to get thick and a bit glossy. Too thin and it spreads out too much, too thick and it gets too hard to spoon out.
Spoon onto waxed paper. Each praline should be about a heaping tablespoon.
Let cool completely. Even if they don't turn out perfectly, they are still yummy!
