2 c white sugar
1 3/4 c flour
3/4 c unsweetened cocoa powder
1 1/2 t baking powder
1 1/2 t baking soda
1 t salt
2 eggs
1 c milk
1/2 c vegetable oil
2 t vanilla extract
1 c boiling water

Directions:
Directions:
Preheat oven to 350º. Grease & flour two nine inch round pans.

In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla. Mix for 2 minutes on medium speed of hand mixer. Stir in the boiling water. The batter will look very thin, don't panic, it's the magic of this cake! Pour evenly into the pans.

Bake 30-35 minutes until toothpick comes out clean. Cool in pans for 10 minutes, then remove to a wire rack to cool completely.

Pairs well with peanut butter frosting!
