Twice Baked Potatoes Recipe

4 medium baking potatoes
1/2 stick butter (melted)
1/2 cup sour cream
3 slices bacon fried crisp & finely chopped
1/2 cup mushrooms, chopped
1 medium green onion, chopped (both white and green parts)
1 cup grated cheese (your choice)
Salt, Pepper & Garlic powder to taste

Bake potatoes until done, using oven or microwave. Let cool until you can handle.
Next cut potatoes 1/3 down from top lengthwise. Scoop out potato from both top and bottom leaving 1/4 inch next to skin of bottom portion. Set the potato skins aside. Mash the potatoes with butter and sour cream, add mushrooms, onions, bacon and mix. If mixture is dry add another 3 or 4 tablespoons of sour cream. After mixing, add salt, pepper, & garlic powder to taste. Next generously stuff the mashed potatoes back int the skins. Add cheese to the top of each potato and heat in oven at 350 degrees, until cheese melts.

Optional: Boil or bake potatoes & mash with butter & sour cream. Add mushrooms, onions and bacon. If mixture is dry, add another 3 or 4 tablespoons of sour cream. After mixing add salt, pepper & garlic powder to taste. Spoon into prepared pan, sprinkle cheese on top and bake in oven at 350 degrees to melt cheese. This method is faster.
