cake:
1 box yellow cake mix
4 eggs
1 package orange jello
1 tsp. orange extract
1 c. apricot nectar
¾ c. wesson oil

icing:
2 c. powdered sugar
3T. fresh orange juice

Cake:
Mix in order. Bake in tube pan that has been greased and floured. 350º for 55 minutes

Icing:
While still in pan and still hot, cover cake with icing. Remove from pan when completely cold.

This is one of MeeMaw's recipes, and my very favorite! When the kids were young and we would go up to the lake to visit, we would arrive after MeeMaw and PeePaw had already gone to bed. The first thing I would do is check the kitchen for the cake keeper and check under it. There was always had an orange jello cake waiting there!
