Ingredients:  
1/2 gallon Fresh tomatoes (peak of ripe) or you can use canned tomatoes
1 Large sweet onion (my choice is vadalia when available)Fresh minced garlic Or garlic powder to your liking
3 - 4 ounce cans of Ortega roasted diced green chilies (mild)
One bunch of Fresh Cilantro, (tops only) (again, adjust to taste)
Salt and Pepper to taste

Mix all ingredients together and refrigerate. Try to stay out of it until the NEXT day.

Note: This is not a Hot Salsa. If you want it hot, add hot peppers.
Jalapeno - A little Hot
Serano - Medium Hot
Habanara - HOT

We like this salsa with eggs, tacos, burritos or just about dish that could be kicked up with tomatoes. We probably eat most of this salsa as a dip with tortilla chips.
