2 garlic cloves
4 long sprigs of rosemary
1/4 cup horseradish sauce
1 (1-1/4 lb. Pork Tenderloin
1/2 tsp salt
1/4 tsp pepper
12 cups de-ribbed and chopped kale leaves
2 T olive oil

01 Prepare a foil lined rimmed baking sheet. Preheat oven to 450 F.

02 Process garlic cloves with the sprigs of rosemary until finely chopped; stir into horseradish sauce.

03 Season the pork tenderloin with 1/4 tsp each of salt and pepper; coat with horseradish mixture. Place pork onto the prepared baking sheet, roast pork 10 minutes.

04 Meanwhile, toss kale with olive oil and 1/4 tsp of salt. Remove baking sheet from oven and sprinkle kale around the pork and roast for 15 to 17 minutes longer or until kale is crispy and pork is cooked through. Serve.
