1 c yellow corn meal
1 tsp sugar
1 tsp salt
1 egg
Hot water - Enough to mix the cornmeal, sugar, and salt together like a pancake texture

Directions:
Directions:
Add all of the above together in a bowl. Add enough hot water to mix. Add egg and mix thin. Put about 2 T of bacon grease in a med-high skillet. Pour a small amount of mixture onto skillet. Cook on one side until brown and flip to other side till brown. Serve warm.

Note: This recipe should be doubled or tripled for a larger number of people.

This recipe is very simple to prepare. It is a old cornbread recipe that was very popular in Mama’s young cooking days. I remember eating these fritters as a child and absolutely loved them! It’s a delicious light bread to add to any meal.
