Cake:
2 c sugar
2 c flour
2 tsp cinnamon
2 tsp baking soda
1 tsp salt
1 c chopped walnuts
1 c shredded, sweetened coconut
2 c shredded carrots
1 1/2 c canola oil
3 eggs
1 8oz can crushed pineapple (with juice)
2 tsp vanilla

Frosting:
8 oz. package of cream cheese, softened
1/2 c butter, softened
2 c powdered sugar

Directions:
Directions:
Preheat oven to 350º. Grease a 9x13 pan.

Cake directions:

Mix together sugar, flour, cinnamon, baking soda and salt. Mix in coconut, carrots and walnuts.
Add oil, eggs, pineapple and vanilla and stir.

Pour into baking dish and bake for 55-65 minutes. 40-50 minutes if you don't use a glass pan. Cool.


Frosting directions:

Use mixer to blend cream cheese and butter. Slowly add in powdered sugar, continuing to mix until all ingredients are combined.
