Olive oil
Salt and pepper
1/2 teaspoon cumin
1/2 teaspoon ground coriander
4 small acorn squash ( you can use butternut squash too but you will want to pre cook it a bit until it is close to tender)

Stuffing, you can make your own, I use multi grain bread, or use store bought
chopped mushrooms
golden raisins if you like
parsley
1/4 Pomegranate, seeded
Almonds, sliced or chopped walnuts

Directions:

Pre-heat oven to 425º. Brush baking sheet with oil. Mix together salt, pepper, coriander and cumin; sprinkle inside squash. Place Squash on baking sheet cut sides down and roast until tender. Turn cut sides up and fill with stuffing that you have added raisins and saute'd mushrooms to mounding slightly.I like to stick them back in the oven so the top of the stuffing get a bit crispy.
Top with nuts, freshly chopped parsley and pomegranates.

these are so pretty when done! I use acorn or delicata squash but you can do in butternut squash too.
