1 c uncooked wild rice
1 lb. chicken breast
2 c mirepoix (chopped celery, carrots, onions)
6 c chicken broth
1 tsp. poultry seasoning
1/2 c butter
3/4 c flour
2 c milk
A few Tbsp. white wine
Up to 2 c additional broth

Directions:
Directions:
1) Rinse wild rice, and place uncooked rice, *raw chicken, mirepoix, chicken broth, poultry seasoning in crock pot, cover and cook 7-8 hrs. Chicken and rice should be done.

2) Remove chicken, cool slightly, shred and return to crock pot.

3) Melt butter in sauce pan, add flour and bubble for 1 min. Slowly whisk in milk until thick and creamy. Stir in wine.

4) Add to rice and chicken in crock pot and stir. Add extra broth for consistency. Season with additional salt and pepper.


* To shorten process, I used precooked chicken and added when rice and mirepoix were done.
