1/4 Cup Unsalted Butter (regular butter is fine)
3 Cloves Garlic, Minced (jarred minced is fine 3 tsp)
2 or more TBSP Lemon Juice (yes you can use the bottled lemon juice, no you cannot use lemonaide)
4 (6oz) Fish Filets (more or less. this is highly adaptable to whatever amount you have)
Salt, pepper, spice mix, paprika, dill, whatever spice you like to taste

1. Preheat oven to 425 and grease a shallow baking dish (9x13) with spray or butter or bacon grease.
2. Whisk together melted butter, garlic, lemon juice and lemon zest (if you used real lemons and have a zester). Set aside.
3. Put fish in dish and season with your choice of seasoning. Drizzle butter mixture over top.
4. Place in oven for 10-15 min until fish flakes easily with a fork. Time will depend on fish used, thickness and how densly packed in the dish.
5 Serve immediately.

Use this for almost any fish, cod, haddock, salmon, tilapia, char, halibut.... you get the picture. Highly adaptable, you can also use a variety of spices and citrus. Don't be afraid to experiment, but go easy on the spices. Try Oranges and limes for the citrus.
