2 cups unsifted flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cups oil
1 cup firmly packed brown sugar
1 cup sugar
4 eggs
2 teaspoons vanilla exract
3 cups peeled grated carrots
1/2 cup chopped pecans
1/3 cup chopped dates (optional)
Frosting
4 ounces cream cheese (softened)
1/4 cup butter (softened)
2 cups powdered sugar (sifted)
1 tablespoon lemon juice

Preheat oven to 350 degrees.
Cake directions- Grease a 10 inch tube pan, set aside
In a medium bowl combine flour and next 4 ingredients, set aside. In a Large bowl beat oil and sugars until well mixed. Add eggs and vanilla and mix well.Add dry ingredients and continue mixing until well combined. Fold in grated carrots, nuts and dates. Pour into prepared pan and bake for 60 minutes or until a toothpick comes out clean.
Cool on a wire rack for 10 minutes before removing from pan.
Cool completely on the rack.
Place cooled cake on serving plate and frost sides and top
