3 c. Brown sugar
1 1/2 c. Shortening (Swiftening brand)
3 Eggs
1 1/2 c. Flour
12 oz. Nestles Semi-sweet Chocolate Chips
4 1/2 c. Quick Oats
3 tsp. Vanilla

Directions:
Directions:
Mixed brown sugar, shortening, eggs and vanilla together, until smooth.
Add Flour.
Add chocolate chips and oats...... mix well.

Drop cookie sized balls on to ungreased cookie sheet.

Bake for 8-10 minutes at 375 degrees......do not over bake.

This is Mrs. Simon's recipe from when I was a child, growing up on Regent Street.
She was the mother of Robbie, Sharon and Eric and they lived on the corner of Regent and 10th Street.
Mrs. Simons was a well known piano teacher who taught lessons to many of my friends through the years.
After grown, I re-visited Mrs. Simons and asked for her recipe......as they were the best oatmeal chocolate cookies I had ever tasted!
