1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
3/4 cup flour
1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/2 teaspoon salt

Filling

1 cup powdered sugar (sifted)
6 ounces cream chees
5 tablespoons butter
1/2 teaspoon vanilla

Directions:

Preheat oven to 375 degrees.
Mix the top 10 ingredients in a mixer bowl. Mix until all is combined.
Prepare a 15" x 10" x 1" pan by spraying with non stick spray and then lining the tray with wax paper or parchment paper.
I spray the top of the paper lining also.
Pour the pumpkin mixture onto the pan and bake for 15 to 20 minutes at 375 degrees.
While this is baking I lay out a linen towel and sprinkle it with powdered sugar.
When cake has finished baking turn it out onto the sugar sprinkled towel. Roll the cake up in the towel and put in refrigerator to cool.
While this is cooling make the icing mixture.
Once cake has cooled take it out of refrigerator and unroll. Spread icing mixture over the cake then roll bake up.
To serve, slice into slices however thick you want to serve.
