Butterscotch Rice Krispie Bars Recipe

Ingredients: 6 cups crispy rice cereal (such as Rice Krispies or GF) 1 (11oz) package butterscotch chips 1 cup creamy peanut butter 1 (11oz) package semisweet chocolate chips-optional

Directions:Line 13 x 9" baking dish with wax paper or parchment paper. Pour 6 cups of cereal in a large bowl, set aside. In a microwave safe bowl, mix butterscotch chips with peanut butter and melt stirring every 30 seconds until smooth (approximately 2-3 minutes). Use wooden spoon to smash chips when stirring. Pour melted mixture over cereal and mix with a spatula or wooden spoon until incorporated. OR instead of microwave, melt chips & peanut butter over double boiler. Pour into greased or wax paper pan. Cover with plastic wrap and refrigerate until firm at least 10 minutes. If you want the chocolate topping: melt chocolate chips in a microwave safe bowl stirring every 30 seconds until melted (approximately 1-3 minutes). Spread over the top of the bars with a spatula. Refrigerate bars again until firm, approximately 10 minutes. I store in the refrigerator covered with plastic wrap or foil. Cut into squares to serve. The trick to measuring peanut butter is to lightly spray oil coating (such as PAM) in the measuring cup first so that the peanut butter comes out of the cup easily. You can also lightly spray your wooden spoon to prevent sticking. I opt to line the pan with wax paper and do not grease with butter. |
