8 oz. bay scallops
½ c. snow peas
1 tbsp. sherry
2 tsp. soy sauce
4 tsp. olive oil
½ tsp. sugar
1 tbsp. water
2 tsp. cornstarch
1 tsp. dried ginger
4 scallions cut into 2" lengths

Directions:

In a small bowl combine sherry with soy sauce,1 tbsp. olive oil, sugar and water
Whisk until sugar is dissolved
Set aside

In small bowl sprinkle scallops with cornstarch and toss to coat evenly

In large skillet heat remaining olive oil over high heat
Add scallops and cook until golden about 1 min
Add ginger, snow peas and scallions
Cook until snow peas are bright green about 1 min
Reduce heat to medium low
Add sauce mixture and cook stirring frequently until sauce thickens slightly and scallops and vegetables are coated about 1 more min
