Yellow onion, chopped
Celery, chopped
Bag of Carrots, chopped
1 Apple, diced
Butter
Turkey
Turkey Stock
Fresh Rosemary,chopped
Fresh Thyme,chopped
Fresh Parsley, chopped
Salt and Pepper

Directions:
Directions:
Place a layer of the chopped onion, celery, carrots and apple in the bottom of a roasting pan. Fill the cavity of the turkey with this as well. Run butter along the outside of the turkey and also put a few tabs under the skin where they will fit.

Cover the turkey with fresh chopped rosemary, thyme, and parsley. Salt and pepper the turkey.
Add turkey stock just enough to cover the bottom of the pan.

Cook covered at 350º until the last hour. After cooking the turkey for about an hour or two, pour turkey stock all over the turkey and again at least 2 more times while cooking. Uncover the turkey during the last hour of cooking and cook at 400º.
