Large Onion
Clove Garlic
Russet/Idaho Potatoes (enough for number being served)
Salt
Bacon Grease or Oil

Directions:
Directions:
1) Peel and cube potatoes (ice cubed size)
2) Peel and chop onion and garlic
3) Saute onion and garlic in bacon grease or oil in pot.
4) Add potatoes to pot, cover just to top of potatoes with water.
5) Add salt to taste and cover pot with lid.
6) Bring to boil, then lower heat to medium (keep pot covered).
7) Occasionally stir potatoes and as water is absorbed, add small amounts of water until potatoes are cooked through and soft.
8) Keep watching that water is all absorbed in to potatoes and the mixture takes on a light brown, creamy texture.
