1 (40 oz) can sweet potatoes
3/4 cup sugar
1/4 cup evaporated milk
3 Tbls mxelted butter
1/2 tsp salt
1 tsp vanilla
2 large eggs

Topping
3/4 cup plain flour
2/3 cup packed brown sugar
1/8 tsp salt
2 tablespoons melted butter
Directions:
Directions:
Preheat oven to 350º
Potato Mixture
Put all ingredients into mixer bowl and beat until smooth
Spray a baking dish with cooking spray and add batter

Topping
Stir dry ingredients together
Add butter and stir
Sprinkle over potato mixture

Bake for 25 to 35 minutes until golden brown
Let stand for 10 minutes before serving

Variation
Add 1 to 2 tsp cinnamon to potato mixture
Top with pecans and marshmellows
