1 tsp olive oil (optional)
¼ cup sherry or apple juice
½ onion, minced
2 cloves garlic, minced
½ cup red bell pepper, chopped
1½ cups carrots, diced
1½ cups celery, diced
4 cups fresh or canned diced tomatoes
1 cup vegetable broth
½ cup orzo pasta
¼ cup fresh basil, chopped OR 1 tsp dried basil

Directions:
Directions:
Heat oil and sherry over medium heat. Sauté veggies until soft, approximately 10 minutes. Add tomatoes, broth and dried basil (if using fresh basil, stir in just before serving). Bring to a boil. Add orzo and simmer 10-15 minutes. Also good with mushrooms.

Note: Omit orzo and used crushed tomatoes instead of diced to make an excellent spaghetti sauce.
