Round loaf of Euro bread (Calabrese, Sourdough, Italian)

Spread:
1/2 cup olive oil
1/4 cup balsamic vinegar
1 clove of garlic

Filling:
5 slices of mozzarella cheese
1 large tomato sliced thinly
roasted red peppers
fresh basil leaves

These ingredients are for a vegetarian version. Feel free to add sliced meats such as salami to the filling. Also, any type of roasted vegetables can be added.

Cut bread horizontally. Spread both sides with the oil mixture. Layer on the filling ingredients.

Put the top on and wrap the whole loaf in foil. Refrigerate overnight with a heavy book or pan on top to flatten and press the loaf down.

Cut into cake-like slices.

Dina Bednar brought this loaf to a pot-luck at work one time and I just had to get the recipe from her. You can fashion the filling with whatever you like as long as the bread has the oil spread on both sides. This travels very well and makes a great sandwich for camping or a picnic and it feeds many people. If you are at home, putting it into the oven for 20 minutes or so to warm up before unwrapping is another option and really brings out the flavour.
