4 cups sliced carrots
3 Tbs. butter
1/4 tsp. salt
1/8 tsp. pepper
2 small or 1 medium chopped onion
2 cups bread crumbs
1/2 cup melted butter
1 can cream of celery soup
1/2 cup grated cheddar cheese

Directions:
Directions:
Preheat oven to 350 degrees. Cook carrots until soft. Cook onions in 3 Tbs. butter. In a bowl combine onions and carrots and stir in soup, salt, pepper and cheese. Place in a casserole dish. Melt 1/2 cup butter and add bread crumbs. Pour bread crumb mixture over carrot mixture and bake, uncovered, for 20 minutes.

Add some dried herbs to the bread crumb mixture, if desired. Sage or poultry seasoning is great if serving with turkey at Thanksgiving or Christmas.

I've had more people ask me for this recipe when I've taken it to a pot luck or served it for a dinner party. I'm not a big fan of cooked carrots, but when I tasted this casserole, I loved it. In fact, I got it by asking for the recipe myself. Perfect when served with chicken or turkey, especially if you add some sage to the bread crumbs.
