Ingredients: 1 lbs dry Black Beans 1 Onion (diced) 1 Green Peeper Diced 1 Bay leaf 1 Tbsp Oregano ¼ cup of olive oil 1 Tbsp salt ¼ cup of White vinegar

Directions: |
Directions:Soak beans over night in water. Once soaked Add diced onion, Green bell pepper, oregano, bay leaf salt and olive oil. Bring to slow boil and then reduce heat to simmer. Cook on Simmer for approximately one hour or until beans are soft, Stir beans every few minutes. Add ¼ of white Vinegar stir. Bean are ready to be served ( the longer you cook the softer the beans will be. Black beans can be eaten alone or served over white rice.
Alternative cooking: Using a pressure cooker speeds up the cooking by 30 minutes and soften the beans better.

Notes: This is the Black bean recipe I learned from my Mother. This was a staple food in our home growing up. My Mother would make a large pot of black beans almost every week and it would be used throughout the week served over rice with other main dishes.
