1 c. flour
½ tsp. salt
½ c. margarine
1-2 Tbsp. ice water

Filling:
1½ tsp. oil
½ c. diced onions
½ c. diced celery
1 lb. (450 g) ground turkey (or chicken)
1¼ c. chicken broth
1½ tsp. each thyme, sage & rosemary
½ tsp. each salt & pepper
⅓ c. steel cut oats (I used regular oats)

Make top crust by cutting margarine into flour & salt mixture with a pastry cutter. Add water until it sticks together then wrap in plastic wrap and refrigerate for 30 min.
Make filling by adding oil to pan over med. heat and add onion & celery. Sauté for 5 min. Add turkey and break up. Add broth, herbs, salt & pepper , bring to a boil and cook for 5 min. Reduce heat, add oats and cover & cook for 30 min. until oats are tender which doesn't take as long using regular oats but most of the liquid should be absorbed. Let cool then transfer filling to a large Pyrex or oven safe glass pie plate. Heat oven to 425º. Take dough from fridge & place on lightly floured board and roll to 10½ inch diameter. Carefully place dough on filling, fold excess under crust & cut vents on top. Bake for 30 - 40 min. or until golden. Let stand 5 min. before serving.
