1 quart fresh apricots that have been frozen with 1/2 cup sugar - thawed
1 tblsp flour
1 tblsp tapioca
1 tsp cinnamon
1 cup sugar
Prepared pie crust - baked

Directions:
Directions:
In large bowl mix the flour, tapioca, cinnamon and sugar in the apricots until dissolved and smooth. Pour into pie crust and bake at 325 degrees for 13-15 minutes.

In 1989 Doug and I were living in Jacksonville. Mom and dad came to visit and we went out to the orchards to pick apricots. This happened to be the best year ever for fresh apricots. I can't remember how many pounds dad picked but Grama and I canned and froze more apricots than either one of us needed!
