Pie Filling:
2/3 cup sugar
1/4 cup cornstarch
1/4 tsp salt
3 egg yolks - sllightly beaten
2 cups milk
1 cup flaked coconut, finely chopped
2 tblsp butter
1/2 tsp vanilla

Meringue:
3 egg whites
1/4 tsp cream of tartar
6 tblsp sugar

1 pastry shell, baked

Pie Filling:
In saucepan, combine sugar, cornstarch and salt. Gradually stir in milk until smooth. Bring to a boil, cook and stir for 2 minutes or until thickened. Gradually stir in 1 cup of the hot filling into egg yolks - then return to pan. Stirring constantly, cook and stir 2 minutes more. Remove from heat and stir in coconut, butter and vanilla.

Meringue:
In mixer beat egg whitesw until foamy - add cream of tartar. Beat until soft peaks form. Beat in sugar 1 tblsp at a time on high until stiff peaks form.

Pour filling in crust. Spread meringue on top - touching the edge all the way around. Sprinkle with coconut flakes and bake at 350 degrees for 13-15 minutes.

Chill to serve.
