8 c. water
2 c. green split peas
1 stalk celery, coarsely chopped
1 large carrot, chopped
1 small yellow onion, chopped
¼ ground thyme
1 pinch of cayenne pepper
1 bay leaf
Salt and ground black pepper, to taste

Directions:
Directions:
1. Sort through the peas for small rocks and rinse. Add to a large pot with the water, celery, carrot, onion, thyme, cayenne and bay leaf.
2. Boil hard for 20 minutes, then reduce the heat to simmer until the peas are tender.
3. Strain through a fine sieve or use a blender or food processor, add the salt and pepper, to taste, and reheat to boiling point.
