2 cans (16oz.) small white navy beans
3 tbsp. unsalted butter or 3 tbsp. olive oil or combination of the two
1 large yellow onion, finely chopped
1 clove garlic, finely chopped
1 large carrot, finely chopped
1 celery stalk, finely chopped
5 c. chicken broth
1 can (16 oz.) plum tomatoes with their juice
1 tsp. dried oregano
1 tsp. dried thyme
1 tsp. sugar
1 bay leaf
Salt anf freshly ground black pepper, to taste
2 tbsp. Italian parsley, finely chopped

1. Drain the beans in a colander and set aside.
2. In a large saucepan over medium heat, melt the butter and or heat the oil. Add the onion, garlic, carrot and celery and sauté until the onion is translucent, 2-3 minutes. Add the broth, tomatoes, herbs, sugar and bay leaf and bring to a boil. Reduce the heat to low, cover and simmer, stirring occasionally to break up the tomatoes, about 1hour.
3. Add the beans and cook until heated through. Discard the bay leaf.
4. Transfer about half of the soup to a blender or food processor and puree (be careful to add a small amount at a time the soup and cover the lid with a dish towel to avoid splashing). Stir the puree back into the pan, and then season to taste with salt and pepper.
5. Ladle the soup into warmed bowls and garnish with the parsley.
