3-5 lb. beef chuck roast
Salt and pepper
Fresh herbs, rosemary, or something
Oil

Directions:
Directions:
1) Rub 2 rounded tbsp. kosher salt on a 3-5 lb beef chuck roast.
2) In a dutch oven, heat ¼ cup veg. oil on med high until slightly smoking, then sear meat for about 2 min on each side. Until brown
3) Put meat and 2 sprigs rosemary in ziplock or vacuum bag.
4) Cook sous vide for 24 hours at 131 deg. F
5) Remove from cooker and bag. Discard juices or keep for a sauce. Cool meat on a cutting board for 20 min.
6) Cut into ~1 inch thick steaks
7) Season each steak with salt and pepper. Heat a cast iron pan over med. High heat, add veg oil to pan and wait till it shimmers. Sear a couple steaks at a time, browning each side. Throw in a crushed garlick clove, and tbsp. of butter when you flip them. Baste in butter baby.

Serve with a sauce made from the reserved juice or… bernaise? Or…

Filet mignon for $3 I know we don’t all have a way to cook sous vide, but when you get a chance this is a great recipe to try first. Flavorful, super-tender steaks from a chuck roast!?
Feeds a big group with little effort.
There are ways to do this without using a tailor made cooker, instead using a digital thermometer and a lot of water.
