Mascarpone Chicken Recipe

4-6 boneless, skinless chicken breasts
1 cup flour
1 1/2 tsp salt (preferably kosher salt)
1/2 tsp black pepper
4 eggs
4 cups dry bread crumbs seasoned with 1 tsp garlic salt
6 Tbsp butter
6 Tbsp olive oil

Directions:
Use sharp knife to carefully slice each chicken breast in half, cutting parallel to the cutting board. The idea is to make them flatter/thinner.

Put each of them between pieces of plastic wrap, and flatten with a meat mallet until it is 1/4-inch thick.

Get three shallow bowls (I use large glass pie pans).

In one bowl, combine flour, salt and pepper.
In another bowl, beat/whisk eggs.
In another bowl, put the seasoned bread crumbs.

Preheat oven to 325º F.

Dip the chicken in flour, then egg, then crumbs.

Melt 1 Tbsp butter and 1 Tbsp olive oil in skillet over medium low heat. Add 2-3 chicken pieces to pan and brown nicely on both sides. (About 5-6 minutes total time.) Salt lightly. (Note: I must buy really thick chicken breasts, because when I get them pounded down to 1/4-inch thick, they have gotten so much wider that I can only fit two at a time in a large skillet.)

Continue to brown remaining chicken in batches of 2-3 pieces at a time, adding 1 Tbsp butter and 1 Tbsp oil for each new batch. Place browned chicken in 9x13 glass dish and finish cooking 20-30 minutes or until juices run clear.

While chicken is baking, wipe out the skillet with a paper towel, and melt 2 Tbsp butter and add 2 Tbsp olive oil. Add 15-20 halved cherry tomatoes and saute 5 minutes. Add 1 Cup mascarpone and saute 2-3 minutes. Serve over chicken.

Optional: saute 1 bulb thin-sliced fennel along with the tomatoes, if you like fennel.

Made this for New Year's Eve 2017 and it was a hit. Menu included my favorite spinach salad, garlic/parmesan angel hair pasta, homemade ciabatta, roasted vegetables (I combined brussels sprouts, parsnips, carrots, butternut squash, and red onion, roasted with olive oil and kosher salt), and fresh fruit (watermelon, strawberries, and blueberries).

Yeah, I love cooking for my family!
