1. 8 oz. jellied cranberry sauce

2. 1 orange & 1 apple ( cut in half then sliced in 1/4 )

3. 2 tbsp. lemon juice

4. 1/4 cup brown sugar

5. 1 duck (about 6 lbs. )

6. 1 pint chicken stock

7. salt and pepper

1. Stuff duck with oranges & apple slices

2. place duck in roasting rack breast down in a roaster

3. mix chicken stock and lemon juice and pour over duck

4. salt and pepper to taste

5. cover and place in oven ( 350 degrees )

6. while duck is roasting mix cranberry sauce and brown sugar

7. after 2 hours remove duck and spoon sauce on duck
place back in oven with out cover for 30 mins.


let duck rest 10 mins. then cut and serve
