Chocolate Snowflakes Recipe

2 c. sugar
1/2 c. vegetable oil (I use canola)
4 (1-ounce) squares unsweetened chocolate, melted
4 large eggs
2 t. vanilla extract
2 c. all-purpose flour
2 t. baking powder
1/2 t. salt

3/4 c. powdered sugar

Yield: about 7 dozen

Directions:
Combine sugar, oil and melted chocolate in a large mixing bowl; beat at medium speed of an electric mixer until blended. Add eggs and vanilla, mixing well.

Combine flour, baking powder and salt. Add about 1/4 of dry mixture at a time to chocolate mixture, mixing after each addition. Cover and chill dough at least two hours.

Preheat oven to 350ºF.

Shape dough into 1" balls (I use my larger cookie scoop and don't bother to roll into balls) and roll in powdered sugar. Place cookies 2" apart on greased cookie sheets.

Bake at 350ºF for 10-12 minutes. DO NOT OVERBAKE. Cool on wire racks.
