1 c. butter, softened
1/2 c. powdered sugar
1 t. vanilla extract
2 1/4 c. all purpose flour
1/4 tsp. salt
3/4 c. finely chopped pecans

Powdered sugar (for rolling after baking)

Yield: 4 dozen

Preheat oven to 400ºF (don't do this until you are rolling the dough into balls as this process takes a long time).

Mix butter, 1/2 c. powsered sugar and vanilla. Mix in flour, salt and pecans until dough holds together. Shape doug into 1" balls (I use my larger cookie scoop, then compact and roll balls so they hold together while baking). Place about 1" apart on ungreased cookie sheet.

Bake until set, but not brown - 10-12 minutes. Roll in powdered sugar while warm; cool. Roll in powdered sugar again. Store in airtight container when completely cooled.
