1 c brown sugar
1/2 c butter
2 eggs
1.5 c flour
2 t baking powder
1 t baking soda
1 c raisins
1/2 c currants
pinch of salt

1 c grated raw potatoes
1 c grated carrots
1/4 c grated apple
1 t cinnamon
1 t nutmeg

Directions:
Directions:
1. Mix raisins and currants in flour.
2. Cream butter and sugar.
3. Combine potatoes, grated carrots, grated apple, cinnamon, nutmeg.
4. Mix everything together.
5. Boil in quart mason jars for three hours.

To Serve:

1. Put pudding in a microwaveable bowl.
2. Add in two oz of brandy
3. Stir
4. Heat for 3-4 minutes.

6. Heat for 3-4 minutes
7. Stir and serve hot with caramel sauce.
