Preheat oven 350º F

OATMEAL COOKIES

½ Cup Shortening
½ Cup Butter
1 Cup Brown Sugar
1 Egg
1 tsp Vanilla
1 Cup Sifted Flour
1 tsp Baking Soda
2½ Cups Oatmeal

DATE FILLING

1 Cup Chopped Dates
½ Cup Boiling Water
2 Tbsp Brown Sugar
1 tsp Lemon Juice

For cookies cream together butter and shortening add sugar, egg and vanilla beat until light. Mix together flour, baking soda and rolled oats. Add the dry ingredients to the creamed mixture slowly. This dough can be chilled in rolls, sliced and baked. I always roll out the dough on a lightly floured counter and cut into round with a glass. (this way the cookies are more uniform for filling)
Bake @ 350ºF 12 -15 minutes

For date filling combine chopped dates, brown sugar, and boiling water. Place in microwave and heat for 3 min or until soft. Remove, add lemon juice and mash until smooth. (you may have to cook longer depending on your microwave)

Once the cookies are cooled spread some of the date mixture on top of one cookie and place another on top. The cookies will be crispy but will soften after the filing is added.

Store in an airtight container. These freeze well, just make sure you have parchment between the cookies as the tend to stick together.
