3 Tbsp olive oil or butter (for sautéing)
1½ lbs Beef, cubed
2 Onions, diced
2 cloves Garlic, minced
1 Tbsp Flour
1 tsp Salt
½ tsp pepper
1¾ c Beef Broth
½ tsp Thyme
1 Bay Leaf
3½ c sliced Mushrooms
2 Tbsp Apple Cider Vinegar
2 tsp Cornstarch
2 Tbsp Water

Directions:
Directions:
Fry beef until brown, set aside. In a deep dutch oven or roaster sauté onions and garlic until onions are soft (about 3-5 minutes). Add flour, salt and pepper, stir well. Add beef broth and beef pieces, bay leaf and thyme. Bring to a boil, cover and reduce heat. Simmer for 1 hour. Sauté Mushrooms then add to beef pot. Add vinegar and mix well. Add cornstarch dissolved in water to thicken. Stir altogether and simmer until thickened. Serve over mashed potatoes.
