6 medium boiling baking potatoes - sliced (2 points or 4 cups)
1 cup grated cheese
3 tbsp. butter or margarine
1 small onion - finely chopped (¼ cup)
3 tbsp. all purpose flour
1 tsp. salt
¼ tsp. black pepper
2 and ½ cups milk
1 tbsp. butter

1 and ½ cups cubed ham

Directions:
Directions:
1) Heat oven to 350º. Grease bottom and sides of 2 quart casserole dish with butter or shortening.
2) Peel, wash and slice potatoes into ¼ slices.
3) Spread ½ of the potatoes on the bottom of the casserole dish. Cover these potatoes with the grated cheese (and optional cubed ham). Cover the cheese layer with the remaining sliced potatoes.
4) In a saucepan melt the 3 tbsp. of butter. add the chopped onions and cook for about 2 minutes until they are tender. Add the flour, salt and pepper and cook the roux for a minute stirring constantly. Add the mild and whisk the mixture. Bring the mixture to a boil stirring constantly and cook until smooth.
5) Pour the milk mixture over the potatoes, Dot with the remaining tbsp. of butter.
6) Cover and bake for 30 minutes. Uncover and bake for another 70 minutes or until potatoes are tender. Remove from the oven and let stand for 10 minutes before serving.
