Equal parts: Brown Sugar; Butter and Lemon Juice

Preheat grill 5 to 10 minutes-clean any residue from grill.
Place salmon filet, skin side down
Temp should be medium high to high
Baste several times (a little at a time...too much runs off and flames up)
Cook without turning until you see some whitish juice start to bubble out of the salmon meat
(You may speed up the cooking by closing the hood of your grill) check often for flame ups.
The tail or thinner part of the filet will cook faster and should be portioned while thicker sections
continue to cook
DO NOT OVERCOOK.
To serve...use the edge of your spatula to cut into the filet down to the skin in serving portions.
Then twist (turn) the spatula under the meat along the skin to position a section of fish on the tool.
If the meat is still red the spatula will not cut easily down to the skin-needs to cook a bit more.
After you have served all pieces, only the skin remains on the grill which can cook a little longer and
then may be removed by folding over itself and removed in one piece for easy cleaning.
