Twice Baked Potatoes Recipe

4 large baking potatoes, washed and scrubbed clean and poke a few holes in each with a pointed knife
8 slices of bacon (or use precooked crumbled bacon bits)
3/4 cup milk, warmed 35 seconds in microwave
1 stick butter, softened
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 cup shredded cheddar cheese
8 green onions, sliced ,optional

sprinkle of paprika

Preheat oven 350. Bake potatoes in preheated oven for 1 hour. Meanwhile if you are not using precooked bacon, place bacon in a large skillet and cook over medium high heat until evenly brown. Drain and crumble then set aside. When potatoes are done, allow them to cool for 10 minutes. In a large mixing bowl place the stick of butter. Slice potatoes in half lengthwise with sharp knife. Scoop out the center and place potatoes on top of butter, saving skin.

Make sure you get most of the potato removed but leave some integrity as not to puncture through the skin. The hot potatoes should melt the butter. Add warm milk, spices, 1/2 cup of cheese and 1/2 green onions and mix with hand mixer until well blended and creamy. Add more spices to taste. Spray a 13 x9 " pan with cooking spray. Spoon filling back into each of the potato skins and place side by side in the pan. Top with remaining cheese and green onions and optional sprinkle of paprika and 1/2 green onions for color. Bake for another 15 minutes

For richness, you can cut milk down to 1/2 cup and butter from 1 stick to 4 tablespoons but add 1 cup sour cream. Add sour cream at the time you add the milk to mixture. I find it is easy to cut up cooked bacon with kitchen scissors.
