1.4 C butter
4 C chicken broth
4 C cubed frozen hash browns
2 C carrot matchsticks
4 large dill pickles
1/2 C flour
1 C pickle juice
1 t Old Bay seasoning or another favorite
1/2 t pepper
1/4 t cayenne pepper
fresh dill
1 C plain greek yogurt

Directions:
Directions:
Melt butter and add hash browns. Stir and cover. Chop carrots. Add to potatoes, stir and cover. Fine chop dill pickles and add. Stir. Add the Flour and stir. Pour half the broth in and stir. Add other half and stir. Add pickle juice, and seasonings. Stir, simmer and reduce heat. Cover and cook until carrots are tender. Chop dill and add. Remove from heat. Stir in 1 C yogurt. Serve.
