4 tbsp. butter
1 tbsp. minced garlic
4 tbsp. all-purpose flour
4 cups milk
1 tsp. chicken buillon powder or kosher salt
1/2 tsp. black pepper
3 lbs. peeled and sliced potatoes
2 cups shredded mozzarella cheese
3/4 cup Parmesan cheese
1 tsp. fresh chives

Directions:
Directions:
Heat butter and add the garlic and saute until just fragrant. Whisk in the flour, continue to cook for at least 2 minutes. Reduce heat, gradually whisk in 4 cups of the milk. Bring to a boil until beginning to thicken. Stir in the buillon powder, salt and pepper. Set aside.
Lightly grease baking pan with cooking oil spray. Arrange a layer of potatoes over the base of the prepared dish. Pour half of the cream sauce over the potatoes, then top evenly with half of the mozzarella cheese and half of the Parmesan cheese. Arrange the remaining potato slices over the cheese, the remaining cream sauce and then the remaining cheeses. Cover tightly with aluminum foil and bake for 40 minutes. Remove foil; cook for a further 30 minutes or until top is golden and sauce is bubbly. Garnish with chives and serve hot.
