½ cup olive oil
2 garlic gloves, minced
1 tablespoon fresh or frozen rosemary, chopped (or 1 teaspoon dried)
1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
¼ teaspoon black pepper
1 cup warm water
2¼ teaspoons active dry yeast
¼ teaspoon honey
2½ cups flour, unbleached or all-purpose
1 teaspoon salt

In a medium saucepan combine the olive oil, minced garlic, rosemary, thyme and black pepper. Warm the oil slowly over low heat for about 5-10 minutes, or until the olive oil becomes aromatic. Set aside.
In a large bowl combine the warm water, yeast and honey. Stir and set aside for (5) minutes.
Add the first cup of flour and ¼ cup of the garlic & herb infused oil to the yeast mixture. Stir a few times until the flour is absorbed and allow to sit for an additional five (5) minutes.
In a separate bowl, combine the last 1½ cups flour with the salt and add it to the mixture. Stir or mix using a dough hook until smooth for about a minute, or knead 10 - 15 times on a floured surface.
Cover with a warm damp clothe, or if you have a Cambro container, take the lid (with a small hole on top) and snap it on to the mixing bowl. Allow dough to rise for an hour then remove the lid or damp clothe.
Heat oven to 450 degrees F. Pour two (2) tablespoons of the herb infused oil into a 11" round stone pan, or a 9" x 13" pan, spreading it evenly around the bottom and sides.
Transfer dough to prepared pan, spread dough out evenly and dimple with fingertips. Then spread the last two (2) tablespoons of the herb infused oil over the top of the dough.
Allow the dough to rise 20 minutes. Bake in a preheated 450 degrees F oven for 15-20 minutes, or until golden brown on top. Cool about 5 minutes in pan, then transfer to a cooling rack.

Notes:
Measure one (1) cup cold tap water and put it in the microwave for 30 seconds on high power, this should make the water just warm to the touch.
You can use a combination of different fresh or dried herbs, to create a variety of Focaccia Breads.
